Today's Must-have is all about me, me, me and has nothing to do with photography. Here's a little tidbit about me...I love Mexican food. I love salsa, guacamole, margaritas and really anything Mexican. A few years ago, I found a great salsa recipe. Its such a cheating, lazy recipe, but the amazing thing is it tastes like fresh salsa (or pico de gallo). It really does...people love this salsa. I get requests to bring it to parties and get togethers. Although I might not anymore, since I'm sharing it here.
1 (14 1/2 ounce) can tomatoes with green chilies.
1 (14 1/2 ounce) can whole canned tomatoes (plus the juice)
1/4 cup onion
1/2 teaspoon garlic salt
1/2 teaspoon cumin
1/4 teaspoon sugar
1. Process onion in food processor for just a few seconds. Add to blender (or to save on dishes, but quartered onion to bottom of blender).
2. Add both cans of tomatoes, salt, sugar, and cumin. to blender.
3. Process all ingredients until well blended but do not puree.
4. Place in covered container and chill. A couple of hours of chilling will help blend and enrich the flavor.
That's it...4 steps. YUM YUM YUM! Enjoy!
